摘要
综述了谷朊粉的质量要求、谷朊粉内在质量的评价指标及各指标的测定方法,并简单介绍了小麦蛋白质质量方面的研究,指出评价谷朊粉质量的方法可以借鉴小麦蛋白质的研究成果,从而找到更快捷、方便、高效的评价手段。
Quality requirements,intrinsic quality evaluation parameters and measuring methods of vital wheat gluten (VWG) were reviewed. Researches on quality of wheat protein were briefly introduced. The feasibility of developing quicker, simpler, and more efficient methods or techniques to assess quality of VWG was discussed.
