摘要
试验测定了15周龄的江村黄鸡胸腿肌中肌苷酸与脂肪酸的含量。结果显示,江村黄鸡胸腿肌中肌苷酸含量为3.04 mg/g,饱和脂肪酸含量为24.60%,不饱和脂肪酸含量为31.93%,必需脂肪酸含量为16.02%,不饱和脂肪酸含量高于饱和脂肪酸。结果表明,江村黄鸡肉质在地方黄鸡中具有一定的品质资源优势。
The inosinic acid and fatty acid contents in the muscle of Jiangcun yellow chicken were measured at 15 weeks age. The results showed that the content of inosinic acid, saturated fatty acid, unsaturated fatty acid and essential fatty acid in Jiangcun yellow chicken was 3.04mg/g, 24.60%, 31.93% and 16.02%, respectively, the contents of unsaturated fatty acid was relatively higher than saturated fatty acid. It indicated that Jiangcun yellow chicken had certain resource advantage in meat quality among the native yellow chicken.
