摘要
秧草在加工过程中易出现腐败、金属离子超标等问题,不仅会损害消费者的健康,还阻碍了秧草产业的发展。把HACCP应用于秧草罐头制品的生产中,对秧草生产过程中可能出现的问题进行了危害分析,确定了生产过程中的关键控制点,制定了相应的预防措施、关键极限等,将生产中的危害降到最低,保证了产品的质量安全。
Spoilage and metal ions exceeding standard occurred in the canned medulla junci can not only do harm to consumers' health but also block the development of medulla junci processing industry.HACCP was applied in production process of canned medulla junci to analyze the potential hazards.The critical control points were confirmed and the corresponding preventive measures and control limits were drafted to minimize the harms in production and assure the quality safety of the products.
