摘要
以新鲜双孢菇为试材,采用护色液浸泡联合护色液烫漂进行护色试验,通过单因素试验和优选试验进行护色剂筛选。结果显示,L-半胱氨酸和六偏磷酸钠的护色效果最好,且烫漂液的澄清度良好。
The fresh agaricus bisporus as marinated and immersion—blanched in the color protection solution for color protection,the optimum color fixatives is determined using the single factor and orthogonal experiments.The result shows that the color protections of L-cysteine and sodium hexametaphosphate are the best,and the clarities of blanching solution are best.
