摘要
目的:建立高效液相色谱法测定火锅老油中胆固醇含量的方法。方法:采用Kromasil C18反相色谱柱(150mm×4.6mm,5μm);流动相:甲醇;流速1.0mL/min,柱温38℃,检测波长205nm。结果:胆固醇在含量为2~10μg/μL浓度范围内有良好的线性关系,R2=0.9995。结论:HPLC法测定火锅老油中的胆固醇具有简便、准确、灵敏度高等优点,适用于火锅老油中胆固醇的测定。
Purpose:To establish a HPLC for determining the cholesterol in reusing hotpot oil.Method:The HPLC was performed on a column of Kromasil C 18(150 mm×4.6 mm,5 μm),held in the oven of 38 ℃.The mobile phase consisted of degassed methanol with the flow rate of 1.0 mL/min.Ultraviolet wavelength was 205 nm.Results:The calibration curve was linear in the range of 2~10 μg/μL(R 2 =0.9995) for cholesterol.Conclusions:The method of HPLC for determining the cholesterol in reusing hotpot oil proves to be convenient,precise and sensitive.The method could be used into the detection of cholesterol in reusing hotpot oil.
