都市蔬菜冷链及装备现状调查与分析

Investigation and analysis of present vegetable cold chains and equipments in cities

现代化冷链及设备对保障都市蔬菜质量和供应安全不可或缺。文章报道上海20个大型蔬菜园艺场冷链及其装备现状,在大量调研数据基础上,综合了解上海蔬菜园艺场基本信息、蔬菜冷链的前处理、预冷、冷藏及流通运输、设备及使用等各环节,分析和讨论蔬菜冷链及其设备中存在的实际问题,并提出解决方案,以期为都市蔬菜冷链及设备研究与改进提供依据和参考。

Modernized cold chain and equipments are indispensable to guarantee both the quality and supply of vegetables in cities.Present vegetable cold chains and their equipments of 20 large-scale vegetable bases in Shanghai were reported.Basic information of the vegetable bases,pretreatment,pre-cooling,cold preservation,cold logistics,and relevant equipments and their utilization in the cold chains were comprehensively investigated and analyzed.The practical problems and difficulties in the current urban vegetable cold chains and their equipments were disclosed and discussed.The results and proposals may be helpful for research and improvement of urban vegetable cold chains and their equipments.
