紫红肉火龙果果肉色素的纯化及稳定性研究 被引量:8

摘要 研究了大孔吸附树脂纯化火龙果果肉色素的条件和纯化后色素的稳定性。采用静态试验和动态试验确定纯化条件,计算纯化色素的色价。在供试的5种大孔吸附树脂中,HPD100树脂的吸附和洗脱效果最好。在室温下,以40%乙醇为洗脱剂,吸附流速和洗脱流速均为10 mL/min时,纯化的紫红肉火龙果果肉色素色价为109.62,是未纯化前的6.2倍。光照不利于色素的稳定,Na+、K+、Mg2+、Ca2+、EDTA以及葡萄糖对色素的稳定性影响不大,而Sn2+、柠檬酸和酒石酸加快色素的降解。 Using the macroporous adsorptive resins studied the purification conditions for pigment from red pitaya pulp and the stability of the pigment after purification.By static and dynamic experimental methods were performed,the purification conditions were studied,color scale of the purified pigment were calculated.Among the 5 macroporous resins tested,HPD100 resin was the best in adsorption effect and desorption effect.At room temperature,when 40% of ethanol was used as desorption solution,adsorption and desorption flow velocities were both 10 mL/min,the color scale of the pigment purified from red pitaya pulp was 109.62,and it was 6.2 times higher compared with that before purification.Light was not conducive to the stability of the pigment,Na^+,K^+,Mg^2+,Ca^2+,EDTA and glucose had little effects on the stability of the pigment,Sn^2+,citric acid and tartaric acid accelerated the degradation of the pigment.
