摘要 本研究运用响应面设计研究了反应物料配比、反应温度、反应时间对脂溶性茶多酚合成反应的影响,并对合成工艺进行优化,同时探讨了其抗油脂自动氧化的特性。结果表明:反应物料配比、反应温度、温度与时间的交互作用、酰氯量的平方、反应温度的平方对合成的脂溶性茶多酚抗脂质过氧化有显著性的影响(p<0.05),最佳工艺条件为茶多酚与酰氯质量比为1∶3.5,反应温度55℃,反应时间5h,合成的脂溶性茶多酚能很好的延缓菜籽毛油的脂质过氧化。 The effects of reactants ratio, reaction temperature and time on the reaction of tea polyphenols modification as well as the optimal reactive conditions are studied by response surface analytical method,and antioxidant activity of modified tea polyphenol is also investigated. The results indicate that the linear term of reactants ratio and reaction temperature, the quadratic term of reactants ratio and reaction temperature, as well as the interactions between reaction temperature and time have significant influence on the antioxidant activity of modified products in lipid (p 〈 0.05). The optimal reactive conditions are 1:3.5 of the mass ratio of tea polyphenol and acid chloride, reacting for 5 hours at 55℃. The lipid-soluble tea polyphenol which shows good antioxidant activity in colza oil from lipid peroxidation.
