水溶性膳食纤维聚葡萄糖的功能研究与应用现状 被引量:11

摘要 水溶性膳食纤维—聚葡萄糖具有很多优异的加工特性和对机体有益的生理功能,如低热量、调节肠道功能、提高免疫力、促进矿物质吸收、降低血糖和控制体重等。由于具有高度的安全性和稳定的加工特性,聚葡萄糖已被广泛应用于饮料、乳品、焙烤、糖果等各种食品及保健品中。
