摘要
以冬虫夏草菌作为生物载体,开发新型生物活性补钙剂。首先研究了菌丝体对Ca2+的富集能力,结果表明冬虫夏草菌具有极强的富集Ca2+的能力,当添加Ca2+浓度高达3g/L时,菌体仍能将80.5%的Ca2+吸收进细胞内;通过原子吸收光谱法测定菌丝体中各组分的钙含量,结果显示62.4%的Ca2+通过微生物的作用转化为有生物活性的蛋白质钙;在Ca2+的总添加量为3g/L时,以氯化钙、碳酸钙、硝酸钙作为钙源的组合,研究口感与生物量之间的关系,结果发现以40%Ca(NO3)2+60%CaCO3组合作为钙源,冬虫夏草菌的生物量高达32.1g/L,且口感最好;卫生学指标检测表明虫夏草菌活性钙制剂符合食品卫生标准,能够作为一种新型补钙制剂。
To develop a new type of calcium supplement agent,Cordyceps sinensis was used as a biological carrier which providing calcium.The results of calcium enrichment rate showed that Cordyceps sinensis could enrich calcium highly.When the concentration of Ca2+ reached 3g/L,80.5% of the Ca2+ was absorbed into the cells.The determination of the calcium content in different parts of the mycelium by atomic absorption spectrometry showed that 62.4% of inorganic calcium turned into protein calcium;When the concentration of Ca2+ reached 3g/L,40% Ca(NO3)2+60%CaCO3 had been proven to be a preferable calcium source to Cordyceps sinensis,with no interference in taste and biomass;Hygiene tests proved that the calcium supplement agent of Cordyceps sinensis by liquid fermentation can be used as a new calcium preparation.
