摘要 研究茶水中矿质元素的含量。采用电感耦合等离子体发射光谱(ICP-AES)技术,测定茶水中Ca、Mg、Fe、Cr、Se、Pb、As的含量,考察茶叶冲泡次数、时间及温度对检测结果的影响。结果表明,茶水中Ca、Mg、Fe含量较高,Cr、Se含量较低,未检出Pb、As。各矿质元素溶出量随冲泡次数增加而减少,随冲泡时间延长和温度升高而增加,90℃冲泡15min有利于茶叶中矿质元素的溶出。 The content of Ca、Mg、Fe、Cr、Se、Pb and As in tea was determined by high-pressure digestion and ICP-AES analysis.The minerals' leaching property was further investigated by simulating the real manner of tea drinking in consideration of extraction cycle,time and temperature.Results showed that the tea tested contained higher contents of Ca、Mg、Fe,in comparison with Cr、Se、Pb and As appeared at very low content in the tea,which were almost unable to be determined by ICP.Treatment at 90℃ for 15 min might promote the leaching out of minerals.
