鲢鱼蛋白质酶水解最佳工艺条件的研究

摘要 以酸法提取的鲢鱼蛋白为原料,采用复合蛋白酶进行酶解,研究了底物浓度、酶解时间、酶解温度及反应pH对蛋白酶水解鲢鱼蛋白的影响,通过正交试验确定最佳酶解条件优化水解工艺。结果表明:复合蛋白酶水解鲢鱼蛋白的最适条件为:底物浓度2%,温度55℃,pH值7.5,酶解时间55 min,优化后的水解液蛋白质回收率约为50.88%。 The proteins of silver carp, which were extracted by acidolysis method, were taken as the raw materials, and then the enzymatic hydrolysis was conducted to them by using complex protease. The influences of substrate concentration, reaction time, temperature and pH on protease hydrolysis of silver carp proteins were analyzed, and the optimal conditions for enzymatic hydrolysis were determined via orthogonal experiment in order to optimize the technology of hydrolysis. The results indicated that the optimal conditions for hydrolysis of silver carp proteins by complex protease were 2% of substrate concentration, 55~C of temperature, pH 7.5, reaction for 55 min. With the optimal conditions, the protein extraction rate was 50.88%.
