摘要
【目的】羊的屠宰加工过程中卫生状况直接影响到肉品的卫生质量,了解新疆羊的传统屠宰与规范化屠宰各环节中的微生物污染现状。【方法】选择新疆羊屠宰过程中具有代表性的规范屠宰场和传统屠宰场,对羊胴体表面以及屠宰各工序、屠宰环境进行采样,测定其菌落总数和大肠菌群指标。规范屠宰羊胴体清洗前、清洗后共350个样,环境采样35个,刀具采样14个,屠宰工人手采样15个,按照GB/T4789.2-2010《食品微生物学检验菌落总数测定》、GB/T4789.3-2010《食品微生物学检验大肠菌群计数》方法测定。【结果】规范屠宰羊胴体清洗前、清洗后的表面平均菌落总数为3.36和3.13 Logcfu/cm2(P<0.05),而传统屠宰羊胴体表面平均菌落总数为3.54 Logcfu/cm2;规范屠宰羊胴体清洗前后的表面平均大肠菌群为2.60和2.47LogMPN/cm2(P>0.05),传统屠宰的平均大肠菌群为2.84 LogMPN/cm2。【结论】传统屠宰的羊胴体表面微生物污染程度比规范屠宰的胴体表面微生物程度高。
【Objective】The quality of meat is directly affected by health status during the sheep slaughter process.For the purpose of knowing some information of the microbial pollution situation of sheep butchered in traditional and standardization slaughtering in Xinjiang,this test chose representative sheep slaughterhouses to detect the total number of the colony and coli group by taking samples from the surface of sheep and every link of the slaughtering.【Method】According to the GB/T4789.2-2010 and GB/T4789.3-2010,a total of 350 samples,35 samples from the air in the workshop,14 samples of cutting tools and 15 samples from the hands of butchers were collected to determine the total numbers of colony and the coli group of cattle carcass,involving cattle carcass before and after wash.【Result】The total numbers of colony are 3.36 and 3.13 Logcfu/cm2 on cattle carcass before and after washing in standardization slaughtering(P0.05),and 3.54 Logcfu/cm2 in traditional slaughtering.The coli group are 2.60 and 2.47 LogMPN/cm2 on cattle carcass before and after washing in standardization slaughtering(P0.05),and 2.84 LogMPN/cm2 in traditional slaughtering.【Conclusion】The tests revealed that the microbial pollution degree of the carcass sheep surface in traditional slaughtering is higher than the surface in standardization slaughtering.
