摘要
我国野生植物资源极为丰富 .为了开发利用野生食物资源 ,改善食物结构 ,增加其花色品种 ,我们以野葛根为原料 ,采用对比分析、正交试验和数理统计等方法 ,对野葛根取汁、澄清和配方等工艺进行了研究 .结果表明 ,在 2 5℃温度下 ,葛根切碎按 1∶ 1加入冷开水混匀榨汁 ;所得葛根汁以 p H值 4.5、时间 4h、温度 60℃酶法处理效果最佳 ;用葛根原汁 15 0 m L/L;蔗糖 80 g/L,柠檬酸 2 g/L,蜂蜜 2 g/L ,饮品调料 0 .7g/L调配饮料 ,制得营养丰富、清凉爽口、风味独特的葛根保健饮料 .
Our country abounds in wild plant resources.In order to exploit wild food resources,improve food structure and increase its variety of colours and designs, we,using ohwi as the material, studied the technologies of its juicing,clarification and beverage formula,with the methods of comparison,analysis,orthogonal design and mathematical statistics.The results show that it is the most effective when ohwi juice,gained by our cutting ohwi into pieces and mixing it with cold boiled water with 1∶1 at 25℃ and pressing juice out,is treated with enzyme for 4 hours with pH 4.5 and the temperature 60℃. when ohwi juice 150 mL/L is mixed with cane sugar 80 g/L,citric acid 2 g/L and beverage condiment 0.7 g/L, the keep fit ohwi beverage,which is nourishing,cold,tasty,and unique in flavour,is now made.
