摘要
以玉米淀粉为原料,在一定条件下制备玉米多孔淀粉。研究了反应温度、反应时间、酶用量等对玉米多孔淀粉收率的影响,并进一步考察了反应条件对产品吸水性能和吸油性能的影响,得出了玉米淀粉水解制备玉米多孔淀粉的最佳工艺为:pH值6.2,反应温度55℃,反应时间为24 h,酶用量为120 U/g,产品最高的吸水率和吸油率分别为93%和60%。
The porous starch of maize are obtained by hydrolysis of maize starch with α-amylose. The effects of temperature, reaction time, and amylase active on the ratio of porous maize starch are studied. The product's water absorption and oil absorption at contain reaction are researched. The optimum conditions of preparation of porous starch from natural maize starch are as follows: adding amount of enzymes 120 U/g, reaction temperature 55℃, reaction time 24 h, pH value 6.2, and the products' water absorption and oil absorption are 93% and 60%.
