摘要
啤酒的酸度长期以来都困扰着中小型啤酒厂,在啤酒质量问题上是不可忽略的问题,该文对啤酒中酸的来源,基本含量进行分析,通过大量的实验,对啤酒酸度的调节与控制提出了个人看法,以期与同行进行交流。
The beer's acidity, which is an un-neglected problem in the beer's quality control, has been troubling many small and middle beer production factories for a long time. This pa- per analyzed the source and basic content of the acid in the beer. Through a series of ex- periments, the author offered a personal opinion on the adjustment and control of the beer's acidity in the end.
