利用微生物生产ω—3多不饱和脂肪酸的研究进展 被引量:1

摘要 ω— 3多不饱和脂肪酸对人体有重要的营养和保健作用 ,目前鱼油是它们的主要来源 ,由于生产工艺复杂 ,且存在腥臭味 ,已无法适应市场的需求。利用微生物生产ω— 3多不饱和脂肪酸则可以克服上述不足 ,因此受到广泛的关注 ,笔者论述了这方面的研究进展。 Omega_3 polyunsaturated fatty acids play important role in human nutrition and health. Currently the mainly available source of omega_3 polyunsaturated fatty acids is fish oil. It cannot meet market demand because of complicated process and unpleasant taste and odor. But the production of omega_3 polyunsaturated fatty acids by microorganisms can overcome the disadvantages mentioned above. Thie paper emphasized the latest research progress in the field of the production of omega_3 polyunsaturated fatty acids by microorganisms.
