采用As1 .398中性蛋白酶水解花生粕蛋白质 ,制备营养性易消化吸收低肽 ,并将花生肽加入酸性果汁 (橙汁 )制作肽饮料 ,产品既具有良好的营养特性又具有特殊可口的风味。
Tan Bin Shan YangZeng Fankun Absrtact The As1.398 subtilisin was used for peanut cake protein hydrolysis to produce nutritive peptides.The product had good nutritional properties and special flavor after the peanut peptide was applied in orange juice.The details of the processing and main techniques were outlined.
