摘要
提取陕西省佳县产红枣的枣皮、枣肉、枣核中的皂苷类、酚类、三萜类3种活性成分,通过提取物对DPPH.清除率的测定,研究其抗氧化活性。结果表明,从红枣中提取的三萜类、皂苷类、酚类都具有抗氧化作用。佳县红枣相同部位的皂苷类对DPPH.具有清除效果最好,其抗氧化作用最强。佳县红枣不同部位,枣皮中提取物对DPPH.的清除效果最好,其抗氧化作用最强。
Saponins,phenols and triterpennoids are extracted from jujube peel,jujube meat and jujube pit.DPPH· radical scavenging abilities of extracts are investigated.Results show that Saponins,phenols and triterpennoids extracted from jujube have antioxidant activity;saponins has the strongest DPPH· free radical scavenging ability among the three kinds of extracts, the most potent antioxidant;extract of jujube peel has the strongest DPPH· free radical scavenging ability.
