摘要
脂肪酶(lipase,E.C.3.1.1.3,甘油酯水解酶)是一类特殊的酯键水解酶,能在异相系统(油—水)界面上水解特殊酯(脂肪酸甘油酯)类,具有重要而广泛的工业用途。综述了脂肪酶的固定化以及固定化脂肪酶的应用研究进展。
Lipase（lipase,E.C.3.1.1.3,Glycerol ester Hydrolase） is a special kind of ester-Hydrolase,hydrolysis of special esters（Fatty acid glycerides） in the heterogeneous system（oil-Water） interface.It has an important and a wide range of industrial uses.This paper summaries the immobilization of lipase and application research progress of immobilized lipase.
