葡萄酒皮渣提取花色苷研究应用进展

Applications and Progress of Extracting Anthocyanins From Wine Pomace

我国葡萄资源丰富,葡萄加工业中会产生大量废弃的葡萄皮渣。葡萄皮渣中含有丰富的花色苷,具有抗氧化及保护视力等功能。因此,探索工业水平从葡萄酒皮渣中提取花色苷方法对于高效利用我国葡萄资源具有积极意义。通过概述葡萄花色苷的研究进展,包括色素的提取纯化法、分析测定方法、生理活性功能等,展望了从葡萄皮渣中提取花色苷的发展前景。

Chinese full of grape resource,the grape processing industry also produces plenty of grape pomace.There is much anthocyanin in grape pomace,which has the function of anti-oxygen activity and protecting eyesight.Therefore,it has great value to efficient utilization of Chinese grape resource by research the technology extracting anthocyanin from grape pomace. This paper summarizes the research evolvement of grape anthocyanin,including extraction and separation methods,analysis method,functional effects etc,and the future development of natural grape anthocyanin is looked forward.
