摘要 近年来,由于许多微生物酶在非水相中的催化反应具有高度的立体选择性和区域选择性,成为国际上非常热门的一个研究领域。脂肪酶(甘油酯水解酶,EC3.1.1.3)是能在异相系统中即在油-水的界面上起催化作用的酶,具有宽广的底物专一性,可以催化甘油酯、酯、硫酯键、酰胺键等的水解。在非水相中完成酯化、交换酯化及转酯等反应。本文主要对近年来脂肪酶在非水相中催化反应在油脂工业中的应用作了简要介绍。 In recent years ,there has been much interest in the use of enzymes as catalysts in non-aqueaus media, because they can provide significant regioselectivity and enantioselective . Lipase (triacylglycerol acylhydrolase EC 3. 1. 1. 3) are active at oil-water interfaces , which can catalyze the hydrolysis of ester bonds. A characteristic feature of lipases is their promiscuous acceptance of a wide variety of unnatural substrates. At very low water levels (e.g < 0. 1%) other reactions ,such as transesterification (alcoholysis , glycorolysis and acidolysis ) and interesterification become possible. This paper describes lipase-catalysed reaction versatile applied in the non-aqueous media in the modification oils and fats, which made energy savings and product quality improvement.
