摘要
探讨了酒用酸性蛋白酶的特性。试验结果表明,酒用酸性蛋白酶的适宜作用温度为30~55℃,适宜作用pH为2.0~6.0,适合于在酒精生产中应用。
The present article investigated the specific property of acid protease for liquor-making.The result of experiment showed that the suitable action temperature is 30~55℃,and the suitable action pH is 2.0~6.0.The acid protease is suitable for alcohol production.
