摘要
以壳聚糖为澄清剂,研究了壳聚糖添加量、果蔬汁溶液pH值、澄清温度和时间对山楂枸杞复合果蔬汁的澄清效果.单因素试验显示:壳聚糖用量为0.6~0.75 g/L,复合果蔬汁pH值为2.5~3.5,澄清温度为35~45℃,澄清时间为60~80 min时,复合果蔬汁的透光率和出汁率均达到峰值.通过正交试验获得的最佳工艺条件为:壳聚糖用量0.75 g/L,澄清温度为45℃,澄清时间为60 min,复合果蔬汁pH为3.5.以此工艺条件处理山楂枸杞复合果蔬汁透光率达到96.1%.
In this paper, we studied the effects of chitosan amount, pH value, clarification temperature, and time on the clarification effect of a compound beverage containing hawthorn and medlar. Single factor experiments showed that the transmittance and the juice yield of the compound beverage reached the peak value under the conditions of chitosan amount 0.6 to 0.75 g/L,pH 2.5 to 3.5 ,clarification temperature 35 to 45℃ and time 60 to 80 minutes. The optimum conditions were obtained through the orthogonal experiments, and the optimum conditions were as follows: chitosan amount 0.75 g/L ,clarification temperature 45℃, time 60 minutes and pH 3.5. Under the optimum conditions, the transmittance of the compound beverage reached 96.1%
