天然抗氧剂研究的进展 被引量:5

摘要 在正常生理条件下,机体内氧化和抗氧化系统处于平衡状态,当这种平衡状态被打破时称为氧化应激。氧化应激引起体内生物大分子和细胞组织损伤,从而引起各种疾病的发生。抗氧剂可通过阻止自由基链反应而防止其对人体的危害,常用作预防和治疗一些复杂的疾病,比如动脉硬化、中风、糖尿病以及癌症等。由于合成的抗氧剂具有毒性和致癌性,因此寻找新的天然抗氧剂取代合成的抗氧剂的研究正日益受到重视。本文对天然抗氧剂的活性成分、影响其活性因素、结构改造以及测定方法等方面进行了综述。
