摘要
中国与法国的烹饪技术是世界公认的最出色的烹饪技术体系,而将烹饪技术作为一门专业进行系统的教育,法国无疑是发展较早的国家。法国的烹饪职业教育经过上百年的发展,已经形成了一个比较完善的教育模式,而我国的烹饪职业教育起步比较晚,虽然两国的烹饪技法与饮食体系存在较大差别,但是在烹饪高等职业教育模式上,法国却有值得学习和借鉴的地方。
While Chinese and French culinary techniques are generally acknowledged to be the world's best,France is undoubtedly one of the earliest countries to develop culinary techniques into a systematic education as a specialization.The culinary vocational education in France has had a history of over a hundred years and has formed a comparatively well-developed educational system;however,the culinary vocational education in China started relatively late.Although there are great differences in the culinary techniques and food system between the two countries,there is still a lot worth learning from French culinary vocational education mode.
