摘要
壳聚糖是一种天然高分子化合物,具有无毒、安全、易成膜、抗菌等特性。该文介绍了壳聚糖保鲜果蔬的机理,综述了壳聚糖在果蔬贮藏保鲜中的最新进展,分析了目前研究中存在的问题并对发展方向作出展望,旨在为实现壳聚糖在农业上的生产化应用提供理论依据。
Chitosan is a natural high molecular compound with the characteristic of non-toxicity, safety, easy membrane formation and antibiosi. The mechanism of chitosan on tresh keeping ttuits and vegetables are introduced. And the application of chitosan application of chitosan on the fruit and vegetable fresh-keeping are reviewed. In addit ion, some suggestions of the development are also presented, amied to provide theory evidence for the yielding application of chitosan in agriculture.
