摘要
研究用甲醇、乙醇、丙酮、石油醚、氯仿、苯和水为溶剂 ,从朝鲜野菊 ( Chrysanthemum koraiense)的花中提取黄色色素 ,并用 72 1分光光度计对该色素在不同的 p H值、不同的介质、不同的光照条件下的稳定性进行了检测 .结果表明 ,在不同 p H值条件下 ,以水为溶剂提取的色素均为黄色 ,且在氯化钠和蔗糖两种介质中稳定性较好 ,色素的残存率最低为 91.18% ;在不同的温度下这种色素的稳定性亦较好 ;但在不同强度的光照下该色素的稳定性不同 ,较强的光照易使该色素分解褪色 ,在室内散射光下 5 h后 ,其残存率仍为 89.67% .由此表明 ,朝鲜野菊花花朵中的黄色色素 ,经人工提取后 ,可以用于食、饮品及固体药物着色 .
The yellow pigment of Chrysanthemum koraiense was extracted through different soluvents such as methanol,alcohol,acetone,petroleum ether,chloroform,benzene and water.Besides,we detected by the 721 spectrophotometer the stability of the yellow pigment for different pH values,different soluvents and different illumination.The results showed that for different pH values the pigment extracted from water solution is always yellow.Its stability in sodium chloride or sucrose for different temperatures is better with the lowest residual ratio of pigment up to 91.18%.The studies also indicate that the pigment can be decomposed and faded through stronger light,but its residual ratio is still 89.67%,even if it is exposed to light indoors for 5 hours.We can conclude that the flower's yellow pigment of Chrysanthemum koraiense can be used for colour agent in food and drink after artifical extraction.
