摘要
在植物油碱炼时,由于水洗不彻底易产生皂化物残留,油脂含皂量(皂化物含量)过高会易导致对人体胆固醇、血压升高、血管硬化等不利影响;因此含皂量已列入产品质量必检项目。在测定低含皂量(<50 mg/kg)油品时,通常用滴定剂量<0.5 ml,但传统化学滴定变色终点不易控制:现可改为采用电位滴定法测定植物油中低含皂量,具有滴定终点判断准确、测定结果科学、正确优点。
Vegetable oils are purified by alkali in their production. The high content of residual soap caused by not-thorough water washing can lead to some disease, such as hypercholesterolemia, hypertension and angionsclerosis, so it was listed as a project of the product quality which must be determined. The titration dosage is usually under 0.6 ml when the low soap content ( 〈 50mg/kg ) is determined, and the titration end discoloration is not easily controlled. We adopt potentiometric titration to assay the low soap content in the vegetable oils. The results show that the titration end was judged accurately, and the test data was proved scientifically and precisely.
