摘要
采用定量描述法(QDA)对三种食醋进行了感官评定,并建立了三种食醋的QDA数据的蜘蛛网图,结果表明,此方法能区别三种食醋的感官特性,适用于食醋感官品质的评价。
Quantitative descriptive analysis (QDA)method was adopted to do the sensory evaluation and to establish QDA data and spider web-shaped graphs of three vinegars. The results showed that it could distinguish the sensory characteristics of three vinegars. Also which was used to evaluate the sensory quality of vinegar.
