蔗糖和乙醇在蔗糖甘油酯微乳液生成中有利于O/W型微乳液的生成 ,并使W /O型微乳区域面积变小 .在表面活性剂质量分数低时 ,要加溶更多的菜籽油则需要更多的蔗糖 ;而表面活性剂质量分数高时 。

Sucrose and ethanol favored the formation of the O/W microemulsion and made the L 2 phase region smaller on formation of sucrose monodiglycerides microemulsions,and high sucrose concentrations are needed at low surfactant content to solubilize more rape-seed oil,and low sucrose concentrations are only needed at high surfactant content to solubilize more oil.
