摘要
分子光谱技术包括紫外-可见光谱、红外光谱、拉曼光谱和分子荧光光谱4大类,这些技术具有操作简便、分析速度快、重现性好的优势,广泛应用在食品安全分析领域。本文综述分子光谱在检测食品掺假、食品添加剂、非法添加物、农药残留以及微生物污染等方面的应用。
The molecular spectroscopy is a kind of widely used technology for the food safety analysis because of its simplicity,rapidity,and good-reproducibility.The application of the molecular spectroscopy,including ultraviolet-visible spectrometry,infrared spectroscopy,Raman spectroscopy and molecular fluorescent spectrometry was reviewed for detection of adulterations,and determination of additives,pesticide residues and microorganisms in food.
