食品是人体摄入各种营养物质的来源。各种兽药、饲料添加剂在食品原料生产中被广泛使用,造成违禁药物特别是激素类物质在不同源性食品中残留。这些激素残留将对人体健康产生影响。因此,建立适用于不同源性食品激素残留检测的方法尤为重要。本文综述了不同源性食品中性激素残留检测的方法,探讨了利用现代分析测试技术检测不同源性食品中性激素残留方法的发展方向。

Foods was a source of human intake of various nutrients. Variety of veterinary drugs and feed additives supplements were widely used in the production of food materials. The illegal substances was found in the different derived food, especially hormone -like substances, which was harmful to public health. Therefore, it was particularly important that the detection method of hormone residues was established in different origin food. The different detection method in different origin food was reviewed. Development direction of detection method of sex hormone was explored by using mod- em analytical techniques.
