摘要
在酵母生长过程中,pH值、碳源及溶氧条件是影响其分泌多糖和降糖效果的重要因素。研究结果表明,当培养基pH值为6.0时,酵母分泌多糖含量达到较高值5.22 mg/mL,降糖速度较快;碳源为果糖时,酵母多糖分泌最多达到5.40 mg/mL;溶氧条件对酵母分泌多糖影响最显著,在好氧和厌氧条件下酵母分泌多糖分别达到4.31 mg/mL和1.81 mg/mL。选择培养基为pH6.0,果糖为碳源且在好氧条件下,有利于酵母生长,降糖速度快,多糖产量高。
pH values, carbon source and dissolved oxygen conditions are key factors influencing polysaccharides-producing and glucose-reducing of yeast during yeast growth process. The research results suggested that as culture medium pH value was 6.0, the content of polysaccharides se- creted by yeast was as high as 5.22 mg/mL and glucose-reducing speed was comparatively fast, as fructose was selected as carbon source, the con- tent of polysaccharides secreted by yeast could achieve 5.40 mg/mL, and dissolved oxygen conditions had the most significant effects on polysac- charides-producing of yeast (the content ofpolysaccharides secreted by yeast reached up to 4.31 mg/mL in aerobic conditions and to 1.81 mg/mL in anaerobic conditions). As the best choice in practice, culture medium pH value should be 6.0, fructose selected as carbon source, and aerobic conditions selected, which were helpful for yeast growth with fast glucose-reducing speed and high polysaccharides yield.
