摘要
以绿茶提取物取代咖啡因,配以B族维生素、氨基酸、牛磺酸、肌醇和异麦芽酮糖等开发一种新型能量饮料。实验得出最佳配方为:牛磺酸500mg/L,赖氨酸200mg/L,肌醇200mg/L,烟酰胺40mg/L,维生素B12mg/L,维生素B64mg/L,绿茶提取物550mg/L,蔗糖5%,异麦芽酮糖4%,果葡糖浆6%,柠檬酸0.258%,柠檬酸钠0.06%。按照该配方及工艺流程操作制得的能量饮料与市售同类型产品相比,不仅消除了能量饮料中的维生素异味而且更加安全健康,符合现代消费者对食品的要求。
A new kind of energy drink was made of green tea extract as the replacement of coffeine and vitamine B,amino acid,taurine,inosite,isomaltulose,etc.Through single-factor and orthogonal experiment,the optimum formula was determined:taurine 500mg/L,lysine 200mg/L,inosite 200mg/L,niacnamide 40mg/L,VB12mg/L,VB64mg/L,green tea extract 550mg/L,sucrose 5%,palatinose 4%,high fructose corn syrup 6%,citric acid 0.258% and sodium citrate 0.06%.Compared with the same type of energy drink on sale,the product in study perfectly eliminated unpleasant smell of vitamin and that was safe and healthy to meet the requirement of consumers well.
