Nutritive characteristics of rabbit meat and human health

摘要 文章从我国居民营养素摄入现状出发,对近年来国内外兔肉营养成分的研究进行了综述,重点阐述了其脂肪酸的组成、胆固醇、氨基酸和矿物质的含量等,特别是它高蛋白质、低胆固醇、低热量、高比例的多不饱和脂肪酸、高赖氨酸、高钾低钠、高维生素B12的特点,是一种符合我国居民现代需求的优质肉品。 Based on the nutrients intake of our residents,this article summarized domestic and overseas researches on nutrients of rabbit meat in recent years,focused on the composition of fatty acid,the content of cholesterol,amino acid and mineral substance,especially,on rabbit meat’s characteristics of high content of protein,vitamin B12,potassium,lysine and polyunsaturated fatty acid and its low content of cholesterol,energy and sodium.Rabbit meat was a kind of excellent meat which met the modern demand of our residents.
