摘要
普鲁兰酶,是能够专一性切开支链淀粉中分支点处α-1,6-糖苷键的一种脱支酶,它在以淀粉为原料的食品工业中有着重要的应用。通过对该领域研究成果的整理,对产普鲁兰酶的微生物选育、酶的分离纯化、酶学性质特点、酶的应用等方面进行了综述。
Pullulanase is a type of debranching enzyme which can specifically attack α-1,6 linkages in amylopectin, and it has important ap- plications in food processing industry. In this paper, the research findings about pullulananse were summarized, and the breeding of pullula- nase-produeing microorganism, as well as the separation, purification, characteristics and application of the pullulanase were reviewed.
