摘要
阐述了黄曲霉毒素的发现过程、结构和理化特性,并根据其形成过程,深入探析了黄曲霉毒素的毒性机理和毒性特征。最后结合黄曲霉毒素的结构、理化性质和毒性,提出了较全面的预防措施。
The discovery process, molecule structure and physical and chemical properties of aflatoxins （AFT） were described. And then the toxicity mechanism and characteristics of AFT were explored and analyzed according to its formation process. Finally, the comprehensive preventive measures were proposed based on its structure, physical and chemical properties.
