摘要
坚果果壳色素是一类天然色素,具有安全性和功能性两大特点。对坚果果壳色素的提取、分离纯化、理化性质以及功能性进行了综述,并介绍了坚果果壳色素的应用和未来的发展前景。
The pigment of hardnut shell is a kind of natural pigment, and it has two advantages of safety and Functionality. The extraction, purification, physical and chemical properties and functions for the pigment of hardnut shell were mainly introduced in this review, and its development prospect of market were also expected.
