以SYS3为发酵培养基,研究了在不同发酵条件下Tween80对乳酸链球菌SM526 产Nisin的影响.在自然pH、兼性厌氧发酵条件下,在体积浓度0~1%的范围内,乳链菌 肽的活性随Tween80浓度的提高而提高,最适浓度(1%)时,提高幅度为36%;浓度超过 1%后, Nisin的活性有所降低.在表性厌氧条件下通过流加 NaOH溶液保持恒定 pH为 6.5并添加 1%的 Tween80进行发酵,同不添加 Tween80相比,发酵单位提高了 30%.在 厌氧条件下恒定pH为 6.5并添加1%的 Tween80进行发酵,同不添加 Tween80相比,发 酵单位提高了17%
Using SYS3 as fermentation medium, the influence of Tween80 concentration on nisin activity during fermentation by Lactococcus lactis SM526 was studied. The results showed that nisin activity was enhanced with the Tween80 concentration increased from 0 to 1% ( ), but the activity was reduced when the concentration was over 1%. Under the natural pH and facultative anaerobic conditions, the optimum concentration of Tween80 was 1%, at which nisin activity increased by 36% above that without Tween80 addition. The nisin activity increased by 30% (in facultative anaerobic media) and 17% (in anaerobic media ) at constant pH 6.5 with Tween80 concentration of 1% as compared to those without Tween80 in the medium.
