摘要
随着宋代油料作物的广泛种植、榨油业的发展及植物油贸易的空前繁荣,同时由于佛教及一些士大夫对素食的提倡,植物油大量应用于烹饪中,改变了主要以动物油脂烹饪食物的传统,促进了饮食文化的繁荣,使得宋代在中国烹饪史上占有重要地位。植物油在宋人生活中,已成为一种必需的日用品,在日常生活中扮演了极为重要的角色。在此背景下出现了"盖人家每日不可缺者,柴、米、油、盐、酱、醋、茶"的说法,后来逐渐演变为"开门七件事,柴、米、油、盐、酱、醋、茶"。
With a wide planting of oil-bearing etable oil trade's flourishing as never before as well crops, development of the oil squeezing industry and vegas the advocation of Buddhism and some scholar-bureau- crats to the vegetarian food, a large amount of vegetable oil was used in cooking that changed the dominant po- sition of animal oil in cooking, and to promote the prosperity of diet culture, which made Song dynasty occupy an important position in the history. For Song dynasty people's life, the vegetable oil had become essential, and, in the daily life, had played a very important role. Under this background, the wording of "ordinary people's essential goods-wood, rice, oil, salt, sauce, vinegar, tea " appeared, and was later evolved into"The seven daily wood, rice,oil,sah,sauce,vinegar,tea".
