黑花生衣色素抗氧化作用的研究

Study on antioxidant activities of black peanut skin pigment

为研究黑花生衣色素的抗氧化能力,对黑花生衣色素溶液进行紫外-可见光谱扫描,并分别测定黑花生衣色素的还原能力,清除羟自由基、超氧阴离子自由基、DPPH自由基的能力以及抗脂质过氧化功能。结果表明:黑花生衣色素的紫外光谱图显示在223nm和278nm处有两个最大吸收峰,与可可色素和高粱红色素等天然抗氧化物质的紫外吸收图谱相似;对羟自由基、超氧阴离子自由基、DPPH自由基的半抑制能力IC50分别为0.601、0.496、0.208mg/mL,对脂质过氧化有很强的抑制作用,是一种效果较好的天然抗氧化剂。

In order to study the antioxidant activities of black peanut skin pigment （BPSP）, reducing ability and scavenging activities of hydroxyl radical,superoxide anion radical and DPPH radical and antioxidative activity on lipid of the BPSP were determined. Results showed that the UV spectrum of BPSP had two maximum absorb summit at 223nm and 278nm,it was the same as other natural antioxidant such as cocoa pigment and sorghum red pigment,and their IC50 to hydroxyl radical,superoxide anion radical and DPPH radical were 0.601,0.496, and 0.208 mg/mL respectively and the antioxidative activity on lipid was strong,it was an excellent natural antioxidant.
