摘要
经营特色是西餐馆经营竞争优势的重要来源。西餐作为外来的餐饮形式,近年来,在大理古城开设西餐馆比较集中的洋人街、人民路、红龙井三条街上,其经营理念与旅游活动中的大众化、时尚化元素相结合,形成了颇具特色的大理古城西餐馆。文章分析了大理古城西餐馆经营现状、经营特色、提出了大理古城西餐馆创新经营管理的对策,以促进大理旅游业的可持续发展。
Business model is an important source of competitive advantage of the west restaurant operators. West restaurant, as the external form of food and beverage, in Dali Foreigners Street, Renmin Road, Hong Longjing in recent years, its business concepts, management style combines with tourism activities in the popularization of fashion elements, forms the distinctive Dali west restaurants. This paper analyzes Dali west restaurants ＇ operating status, operating mode, and proposes Dali west restaurants＇ innovation management to promote the sustainable tourism development in Dali.
