广州市海珠区食品安全风险监测结果分析 被引量:4

Analysis on the results of food safety risk monitoring in Haizhu district of Guangzhou

摘要 目的了解和分析我区食品污染水平及变化趋势,评估食品安全现状。方法随机抽取海珠区各类超市、农贸市场各类食品进行化学污染物和食源性致病菌监测。结果2009~2011年共监测样品438份,总合格率为73.05%。水产品中副溶血性弧菌检出率为27.78%,畜禽肉沙门氏菌检出率为4.28%,熟肉制品、凉拌菜大肠菌群污染严重,检出率为25.67%;畜禽肉、茶叶、海水鱼、淡水鱼等重金属铅、镉超标,超标率分别为2.67%、5.43%;水发产品甲醛污染严重。结论海珠区市售食品存在安全隐患,应加强对各类食品的监管.保障食品安全。 Objective To investigate and analyze the level and trend of food pollution, and evaluate the situation of food safety. Method Different kinds of food were taken randomly from various supermarkets and agricultural products markets in Haizhu district, and chemical contaminants and foodborne pathogens were analyzed. Results During 2009 and 2011, total 438 samples were collected and tested. The results indicated that total eligible rate was 73.05%. The detection rate of vibrio parahaemolyticus in the seafood was 27.78%. The detection rate of salmonella in meat was 4.28%. The pollution of coliform group in cooked meat and salads was serious, with the detection rate of 25.67%. The heavy metal lead and cadmium in meat, tea, sea fishes and freshwater fishes exceeded the standard, with the superstandard rate at 2.67% and 5.43%, respectively. The formaldehyde pollution in waterishlogged food products was also serious. Conclusion There is security risk in the commercial food products in Haizhu district. To ensure the food safety, the monitoring managements to different kinds of food need to be strengthened.
