概述了新型白酒的发展历程、现状和趋势 ;着重阐述新型白酒优质基酒和调味酒的生产方法 ;新型白酒配方设计的原则、依据、配方实例 ;提高新型白酒质量的技术关键及新型白酒的生产方法。
The development process, current situation, and development tendency of new type liquor were summarized. Especially, the production methods of high quality basic liquor and flavouring liquor, the principle of the designation of new type liquor prescription and its evidence and living examples, the key technology of improving the liquor quality, and the production methods of new type liquor were illustrated in this paper.(Tran.by YUE Yang)
