大豆脂肪氧化酶与籽粒营养品质关系的研究

Soybean Lipoxygenase and Soybean Nutritional Quality

利用大豆近等基因系研究了脂肪氧化酶缺失对大豆种子中蛋白质、氨基酸、脂肪及脂肪酸含量的影响。结果表明 ,脂肪氧化酶及同功酶缺失 ,对蛋白质、脂肪及脂肪酸含量无影响。脂肪氧化酶及同功酶缺失 ,可能引起种子中脯氨酸含量降低 ,对其它氨基酸无影响。脯氨酸不在人体必需氨基酸之列 。

The soybean seed lipoxygenase isozymes and the contents of seed protein,amino acids,fat and fatty acid were investigated using soybean seed lipoxygenase isolines.The results indicated that lack of soybean seed lipoxygenase isozymes had no effect on the contents of seed proteins,fat,fatty acids and most amino acids,but led to decrease of proline content.Since proline is not an essential amino acid to human body,the lack of soybean seed lipoxygenase isozymes does not cause change to soybean nutritional quality
