加压CO_2对乳中荧光假单胞菌杀菌效果的研究 被引量:3

摘要 为了研究加压CO2对乳中荧光假单胞菌的杀菌效果,首先采用单因素试验研究处理压力、处理时间和处理温度分别对杀菌效果的影响,然后通过正交试验确定最佳杀菌条件。结果表明:当压力为7 MPa,时间为70 min,温度为40℃时,加压CO2对荧光假单胞菌杀菌率为99.80%。 Sterilization effect of high pressure CO2 on Pseudomonas fluorescens in milk was studied.The lethal effect of CO2 pressure, treatment time ,treatment temperature on Pseudomonas fluorescens were studied by single-factor experiment; then the optimal sterilization condi- tions was determined by the orthogonal experiment. The results showed that the lethality rate of Pseudomonas fluorescens was 99.80% when it was under the optimal sterilization conditions of 7 MPa, 70 rain and 40 ℃.
