本文探讨了果味酸牛乳冰淇淋的加工工艺 ,确定了较为适宜的生产条件 ,对原辅料的选用、处理 ,果料的添加 ,酸牛乳冰淇淋的制作等问题作了深入介绍。
This paper discussed the technology of fruit yoghurt ice cream.The suitable processing conditions was determined.The choice and treatment of raw material、the supplement of fruit material and production of yoghurt icecream were introduced in a deepgoing way.
