摘要
利用法国Alpha M.O.S公司生产的ASTREE电子舌对中国白酒和鸡尾酒所使用的基酒进行测定,所得数据利用主成分分析法(PCA)进行分析,并结合感官评价对样品进行综合评价,对样品的风格特点进行有效的区分和辨别。
Chinese liquor and cocktail base wine were assessed by ASTREE electronic tongue made by French Alpha M.O.S.All the obtained data were analysed by multivariate data processing based on principle component analysis(PCA).Then the comprehensive evaluation was made based on electronic tongue assessment coupled with sensory evaluation.And their characteristics and their styles were distinguished and identified clearly.
