摘要
[目的]了解不同消毒方式食(饮)具的消毒质量,为指导食(饮)具消毒工作提供科学依据。[方法]2011年3~8月,我们在龙岩市城区13家集中式食(饮)具消毒服务机构、4家使用一次性餐饮具单位、21家自消洗食(饮)具的餐饮单位,对杯类、碗类、碟类进行大肠菌群、致病菌、游离性余氯和烷基苯磺酸钠残留量检测。[结果]合计检测待使用的食(饮)具465份,各项指标均合格的413份,合格率为88.82%,其中大肠菌群的合格率为88.82%,游离性余氯、烷基苯磺酸钠合格率均为100.00%,致病菌均未检出。食(饮)具消毒合格率,食(饮)具消毒机构为93.33%,自消毒食(饮)单位为81.43%,一次性消毒餐饮具为100.00%(P>0.05);杯类为100.00%,碗类为90.77%,碟类为89.23%(P<0.05)。食(饮)具烷基苯磺酸钠检出率,食(饮)具消毒机构为4.10%,自消毒餐饮单位为8.10%,一次性餐具为0.00%(P<0.05)。[结论]集中式消毒食(饮)具与一次性使用餐饮具的消毒质量较好。
[Objective]To understand the disinfection in different ways disinfection tableware of Longyan city, so as to provide basis for guiding the tableware sterilization. [Methods] During March, 2011-August, 2011,13 service agencies of centralized tableware disinfection, four units of disposable tableware, 21 catering units from the consumer to wash table ware were selected to detect the coliform bacteria, pathogens of free residual chlorine and benzene sulfonate residues in cups, bowls, and plates. [Results] A total of 465 were detected to be used in tableware, 413 indicators were qualified, a pass rate of 88.82% of coliform bacteria, pass rate of 88. 82% of free residual chlorine, alkyl benzene sulfonate, pass rates 100.00%pathogens were not detected. The tableware disinfection pass rate, tableware disinfection institutions was 93.33 %, 81.43 % self-catering units of disinfection time, disinfection tableware 100.00 % ( P 〉0.05) ; cup of 100.00 %, in the bowls of 90.770%,dish category 89.230% (p 〈0.05). The detection rate of tableware benzene sulfonate, tableware dis- infection agencies of 4.10%, self-disinfection Of food and beverage units to 8.10%, 0.00 % ( P 〈0.05) disposable tableware. [Conclusion]Sterilization quality of centralized disinfection tableware and disposable tableware is better.
